What is porchetta some of you bravely ask?
Porchetta is a savory, fatty and moist boneless pork roast with a huge history in Italy. Deboned meat is roasted traditionally over wood for at least 8 hours with fat and skin still on. Seasoned with garlic, rosemary, black pepper and fennel for use—mainly—in creating sandwiches. Michael Toscano is the chef.
